One pound of flank steak, cut in half, or two rib-eye or New York strip steaks, each about one inch thick

Four tablespoons (1/2 stick) unsalted butter

three minced garlic cloves

  1. Prepare the Potatoes:
    • Heat 3 teaspoons of olive oil in a large skillet over medium heat.
