Begin this classic pie recipe with a pre-made or homemade pie crust in a 9 inch pie plate. Optional- Brush the crust with a light coating of egg wash before baking to make it lovely and golden.

The filling is a simple custard that easily comes together with pantry ingredients; eggs, sugar, vanilla extract, a pinch of salt, and rich whole milk or half-and-half. A little flour is needed to make the custard set and a pinch of ground nutmeg gives it a hint of warmth which combines so well with the vanilla.

Start by heating your oven to 375 F (190 C). Preheat the oven and, in the meantime, whisk together the eggs, sugar, vanilla, and salt in a bowl until the mixture becomes smooth and well combined. Add the milk gradually and stir until it has a uniform texture. Whisk the flour and optional nutmeg together in a different bowl and gradually add this to the custard base, stirring thoroughly to prevent lumps.

When you have your custard mixture, pour into your prepared crust, and fill evenly. Put the pie in the oven and bake at 45 to 50 minutes. It will be ready when the edges are beginning to turn lightly golden and a knife inserted near the center comes out clean. The center will be set, but will still have a little wobble, it will firm up as it cools.

When done baking, let the pie cool then slice. This chill period allows the custard to settle and is easier to slice. You may serve the pie at room temperature or cold, as you wish. You may also sprinkle powdered sugar on top or top with a dollop of whipped cream right before serving.

Old-Fashioned Custard Pie is not only a pie, but a silent salute to the past, to the recipe that isn’t striving too hard to be impressive, but always hits the spot. With each bite you are reminded of the fact that sometimes the simplest of ingredients prepared with love make the most memorable of tastes.
